Within a range, every colourway is the same racket. Only the artwork changes, so pick the one you like the look of.

EVA (the foam core)
EVA is the foam inside the racket face. Soft EVA has more give, so the ball comes off easily at slower speeds and it's kinder on your arm. Hard EVA is firmer. It gives you more control and more power when you swing hard. New to padel? Go soft.

Balance (where the weight sits)
Balance is measured in millimetres from the bottom of the handle. Around 255mm is head light: quick in the hand and easy to control. Around 265mm is even. Around 275mm is head heavy, with more power through the swing. Beginners usually get on best with head light or even.

Fibreglass vs carbon (the face)
Fibreglass faces flex more, so they feel softer and more forgiving. Carbon faces are stiffer, giving more pop and precision. Fibreglass is the easier place to start.
